With the Queen’s platinum jubilee fast approaching, many people will be starting to plan street parties and events to celebrate the occasion, and we’ve no doubt that food will play a big part in the festivities.

BBC One recently followed five exceptional home bakers, shortlisted from thousands of applicants, in a national competition run by Fortnum & Mason. This was a once in a lifetime opportunity, with the objective of creating a brand-new pudding to mark the Queen’s historic 70 years’ service to the people of the United Kingdom, the Realms, and the Commonwealth. The main criteria for the celebratory pudding were simple. It needed to taste just right, be perfect for home bakers to reproduce, have a memorable story behind its creation and finally, be fit for a queen!

On Thursday 12th May, the winner of Fortnum and Mason’s platinum pudding competition was announced. We thought we’d share the recipe for Jemma from Southport’s, Lemon Swiss Roll and Amaretti Trifle, which we think you’ll agree looks delicious.
